Ingredients

  • 1 cup (7½ oz.) 240 ml (210 g) cottage cheese
  • 2½ oz. (5 tbsp) 70 g (70 ml) cream cheese
  • ½ cup 120 ml heavy whipping cream
  • 2 tbsp 2 tbsp cocoa powder
  • 1½ oz. (513 tbsp) 45 g (80 ml) sugar-free dark chocolate
  • 2 tbsp 2 tbsp powdered erythritol
  • 1 tsp 1 tsp vanilla extract
  • 1 pinch 1 pinch salt

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Add the cottage cheese and cream cheese to a food processor or blender and blend for 1 minute.
  2. Scrape down the sides and blend for another minute, until completely smooth.
  3. Add the cocoa powder, erythritol, vanilla, and a pinch of salt, then blend until smooth.
  4. Melt the chocolate in the microwave in 30-second intervals until smooth, then let it stand for about 10 seconds.
  5. Add the melted chocolate to the cheese mixture and blend until smooth.
  6. Beat the heavy cream until soft peaks form.
  7. Gradually fold the chocolate-cheese mixture into the whipped cream until well incorporated.
  8. Divide between four serving glasses or pipe for a more elegant look, then chill for 1 hour before serving.

Recipe notes

If cottage cheese is very watery, drain briefly in a fine-mesh strainer before blending.

Melt chocolate gently and cool until lukewarm before adding — hot chocolate can loosen the cream.

Refrigerate 1–2 hours for the best texture.
